This hardly needs a recipe. Fresh mint is finely chopped, placed in a jug or small bowl, a little sugar added and then a splash of boiling water to melt the sugar and release the flavour. Add vinegar and it’s done.

Prep: 5 minutes
generous handful of mint leaves
scant ¼ tsp white sugar
1-2 tbsp boiling water
4 tbsp malt vinegar
Finely chop the mint. Place in a small bowl. Add the sugar and boiling water, just enough to bruise and slightly soften the mint. Stir in the vinegar. That’s it.
